What it is
Malcom’s Bird Brine is a powdered brine that helps make chicken, turkey and other poultry juicier and more flavourful. Behind the Malcom’s range is pitmaster Malcom Reed, who started competing in BBQ in 2002 and shares his grilling and smoking recipes through HowToBBQRight. Malcom’s Bird Brine combines salt and sugar with whole peppercorns, garlic, onion, rosemary, bay, sage, thyme and lemon peel. The flavour is salty, herby, peppery and lightly citrusy, without excessive sweetness or heat. Malcom’s Bird Brine is suited to brining whole chicken, turkey, duck, goose and poultry breasts before grilling, roasting or low and slow smoking. Dissolve the mix in water and keep the bird fully submerged in the cold liquid throughout the brining process.
GRILLY comments
We would reach for Bird Brine primarily with whole turkeys and larger chickens, where the breast meat can easily dry out over a long cook. After brining, dry the bird thoroughly — you won’t get a nice, crispy skin off wet skin. There’s already plenty of salt in the brine, so go easy with any BBQ rub you apply afterwards and choose one on the lighter side for salt.
