What it is

Chicken Shit is a sugar-free BBQ rub with a salty, oniony, garlicky and herby flavour, created specifically for poultry. Chicken Shit is part of Big Cock Ranch’s Special Shit Seasonings range, which started out as a homemade rub in Dani’s kitchen and grew, by popular demand, into a full lineup of rubs, sauces and salsas. Chicken Shit combines basil, parsley, oregano, celery, paprika and pepper with a classic onion-garlic base. This poultry rub works on chicken wings, chicken thighs, chicken breast, whole chicken and turkey. Use Chicken Shit before grilling, oven roasting, pan frying or low and slow smoking. Because it contains no sugar, Chicken Shit is also suited to higher-heat grilling — the rub won’t caramelise or catch as quickly as sweeter BBQ rubs do.

Our first move would be to put Chicken Shit on chicken wings, skin-on thighs or a whole bird on the grill. The flavour is herbier than your typical sweet, paprika-forward chicken rub, which makes it a welcome change when classic American BBQ flavours start to feel a bit samey. Since the rub already contains salt, there’s no need to add extra salt to the chicken.
