What it is

American Stockyard Memphis Red BBQ sauce is a sweet, tangy and lightly spicy Memphis-style sauce that works especially well on pulled pork and other pork dishes. American Stockyard is a brand from Spicin Foods, based in Kansas City, and their sauces are made in small batches. The flavour base of Memphis Red is built on cane sugar, apple cider vinegar and tomato paste, with black pepper and red chilli adding the kick. Compared to a thick, very sweet Kansas City-style BBQ sauce, American Stockyard Memphis Red is sharper, fresher and more peppery. This BBQ sauce works on pulled pork, ribs, chicken, beef, burgers and other grilled or smoked dishes. American Stockyard Memphis Red can be used as a marinade, for basting during cooking, stirred into pulled meat, or served alongside finished food as a dipping sauce.

Our first move would be to stir it straight into pulled pork — the tangy bite cuts through the fattier pork really well. It works on ribs and chicken too, especially when a thick, very sweet BBQ sauce feels like a bit much. There is heat, but this is not a sauce that requires a fire extinguisher on the table.
