What it is

American Stockyard Southern Blues BBQ sauce is a sweet, smoky and moderately spicy Southern-style sauce with a noticeably more layered flavour than your average tomato-based BBQ sauce. American Stockyard is a brand from Spicin Foods, based in Kansas City, producing their sauces in small batches — the company has taken over 200 national and international awards. The base of American Stockyard Southern Blues is brown sugar, apple cider vinegar and tomato paste, with molasses, tamarind, smoke flavouring and vanilla extract adding depth. Paprika, chilli, black pepper, cayenne, mustard seeds, garlic and other spices give the sauce a warm, gently peppery finish, though it is by no means a burning-hot BBQ sauce. American Stockyard Southern Blues works particularly well on ribs, pulled pork, chicken, beef, lamb and burgers. Use it as a marinade, dipping sauce, burger or wrap condiment, or as a glaze in the final stages of grilling or low and slow smoking.

Our first choice for Southern Blues would be ribs — the brown sugar and molasses build a beautiful glaze on the meat while the vinegar and spices keep everything in balance. The vanilla does not make this a dessert sauce; it simply adds a different kind of softness and depth in the background. With pulled pork, we would use it in moderation so the smoky sweetness does not overshadow the flavour of the meat itself.
