Our first move would be to put this on brisket or beef ribs — the smoky character of the chipotle and ancho is a natural fit with beef. Four chillies might sound like a warning, but this is actually a very mild sauce; no need to worry about the heat. It works well on pulled pork too, especially if the usual very sweet BBQ sauce is starting to feel a bit one-dimensional.
