What it is

Angus & Oink King Katsu Japanese Curry Powder is an aromatic rub inspired by the flavour world of Japanese katsu curry. Turmeric, coriander, fenugreek, cumin, ginger and cardamom create a warm, rich flavour that is rounded out by garlic, onion and the deep umami of soy sauce powder.

The rub works particularly well for seasoning breaded chicken, chicken thighs, pork, prawns and vegetables. You can also use it to make a classic katsu curry sauce by adding onion, carrot, coconut milk or stock. Stir it into mayonnaise and you have a quick, aromatic dip to serve alongside burgers, chips or crispy chicken.

King Katsu is not a hot curry — it is warm, aromatic and deeply flavourful. Turmeric, coriander and cumin come through clearly, while ginger, garlic and soy sauce powder add the salty umami note that is characteristic of Japanese curry.

The safest bet is crispy panko-breaded chicken with a thick curry sauce and rice. That said, King Katsu works brilliantly in a chicken burger too, where you can use the rub to season the chicken, mix it into the breadcrumb coating and stir it through a mayonnaise-based sauce.
