Barbecoa Korean Chicken BBQ Sauce

What it is

Barbecoa is a well-known BBQ team from Belgium and multiple national champions. The team is also a regular contender for the title of best BBQ team in Europe. Team leader Tom Bertels makes sauces and rubs alongside the competition work. His Korean Chicken Sauce is tangy, lightly sweet, and carries a satisfying kick. It draws inspiration from buffalo sauce but is very much its own thing — Tom has found a balance that keeps the heat in check rather than blowing your head off, using authentic Korean gochujang chilli paste. The sauce has a pleasantly creamy consistency that clings well to food. A very, very good sauce for chicken, wings, or scampi bowls.

There is heat, but not so much that someone who is not a big spice fan would struggle with it. A good illustration: it turned a bacon-wrapped piece of chicken that had dried out completely into something genuinely worth eating.

Do not stop at chicken — think salads too, because the creamy texture works really well there.
