What it is

Barbecoa Perfect Blend is a well-balanced BBQ sauce with a mildly sweet, lightly tangy and umami-rich character. Barbecoa founder Tom Bertels is a multi-title European BBQ pitmaster whose sauces and rubs are rooted in competition BBQ experience. Barbecoa Perfect Blend has taken a gold medal at the International Flavor Awards and finished second at the American Royal BBQ Sauce Contest. The sauce brings together tomato, gentle sweetness, smoked paprika and a restrained vinegar note that complements smoked meat without tipping the result into overly sweet or sour territory. Barbecoa Perfect Blend works on chicken, pork, bacon, pork ribs, pulled pork, pulled chicken and pulled beef, and it holds its own alongside pizza, tacos, chips and jacket potatoes. Use it as a dipping sauce, stir it through pulled meat, tuck it inside a wrap, or brush it onto the meat in the final stages of a low and slow cook for a sticky glaze.

We would reach for Perfect Blend first on pork ribs, pulled pork and chicken. The flavour is nicely balanced — the sweetness never takes over, and that small vinegar note helps cut through fattier pork. Avoid cooking the sauce over direct flame, as the sugars can catch and burn fairly quickly.
