What it is

Special Shit is an all-purpose rub with a salty, peppery and garlicky flavour, suited to both BBQ and everyday cooking. It was Big Cock Ranch’s first rub — Dan originally made it in his own kitchen to season ribeye steaks. Growing interest from friends and acquaintances led to full production, and in time an entire Special Shit Seasonings range was born alongside it.

Black pepper, garlic, paprika, onion and chilli powder give Special Shit a full-bodied, moderately spicy character, balanced by a small amount of sugar. This all-purpose rub works on steaks, chicken, pork, seafood, fish, potatoes and grilled vegetables. The producer also recommends it for seasoning soups and salads.

Use Special Shit before grilling, smoking, pan-frying or oven roasting. It works well both as a standalone seasoning and as a salty, garlicky base layer beneath a sweeter BBQ rub.

We would reach for Special Shit first on steaks, burgers, grilled chicken and roast potatoes. The flavour is versatile enough that the same jar earns its place at the grill and on a weeknight in the kitchen. Since salt sits at the top of the ingredient list, we would not add extra salt to the meat before cooking.
