This rub has won a lot of people a lot of money — hence the name. These days it has become more of a home cook’s favourite, because competition BBQ has moved towards ever-sweeter profiles and most people aren’t after that level of sweetness at home. It’s a pleasant blend of salt, pepper and sugar. Although the manufacturer says it works on chicken, pork and beef, our recommendation is to skip it on chicken. Big Poppa Smokers rubs use larger sugar crystals that won’t dissolve quickly enough on poultry — for chicken you’re better off with a finer-ground rub.
