What it is

Angus & Oink Suya, Like it Spicy is a hot and aromatic BBQ rub inspired by West African suya tradition, for seasoning beef, chicken and lamb. Angus & Oink founders Scott and Malissa Fraser develop their blends from flavours encountered on their travels and from the traditions of cooking over fire. The suya flavour profile is warm, spicy and rich, with a noticeable chilli heat and the deep, complex spicing characteristic of African cuisine. Angus & Oink Suya works particularly well on thinly sliced beef, chicken skewers, lamb steaks, meatballs and kebabs. The rub can be used dry or mixed with oil to make a marinade to coat the meat before grilling. Beyond the grill, the Suya rub also works well in spicy stews, braises and rice dishes. The manufacturer’s official recipes use it on beef skewers, chicken kebabs, lamb, and in a low and slow oxtail stew.

GRILLY comments

Our first move with this would be a proper set of beef skewers — slice the meat thin, a little oil, and a generous coating of Suya. This is not a shy rub; the chilli heat and warm spicing are very much present. If you are sensitive to heat, start with a smaller amount, because you can always add more but you cannot take it back.
