What it is

Barbecoa is a well-known BBQ team from Belgium and multiple national champions. The team is also a regular contender for the title of best BBQ team in Europe. Team leader Tom Bertels produces sauces and rubs alongside the competition work. The Sweet rub is what the team themselves use most often for pork — ribs and pulled pork included.

Despite the name, this is not an all-out sweet blend. True to Low Countries tradition, salt forms the backbone, but with a strong sweet note — the idea being that the salt acts as a flavour enhancer to bring out the natural taste of the meat.
